The hobby of brewing one’s own alcoholic beverages was illegal in many countries until the second half of the 20th century. However, now anybody is able to engage in the practice, and enjoy a home-made drink created by following wine recipes.
There is a plethora of different types of wine, which means that recipes can vary quite substantially. “Standard” bottles, which have their origins places such as Europe, California and Australia are generally based on grapes. However, other fruits can be used in place of grapes. The overall quality of the output is often largely dependent on the quality of the fruit, so it is important to purchase fruit of a high standard.
Before fermentation or any similar processing can commence, the fruit needs to be washed and then go through a stage often refereed to as “flavor extraction”. The first part of this extraction requires the fruit to be crushed, chopped or ripped up in order to give it as large a surface area as possible.
It can either be mixed a substance called pectic acid, or have some form of heat extraction performed. Heat extraction either involves direct heat being applied to the mixture whilst in a pan, or the mixture being mixed with hot water. All of these methods alter the taste in their own way, so a novice might choose to try different ways of flavor extraction with each of their first batches.
The mixture is then left for several hours before being mixed with yeast nutrients and sugar (to ferment the solution and produce alcohol), as well as sulfites to minimize the risk of fungal growth whilst the drink is fermenting. After this process is complete comes the long fermentation period, which can last a few weeks, dependent on the recipe followed and fruit used.
This is simply one process that might be followed in wine recipes. There are dozens of other ways to create alcoholic drinks, all of which alter the taste in a different way. The best way to become an expert, is to start brewing your own.
