When it is done, though, it will be ready for bottling. After this, you will need to transfer the wort, which should now look clear into a bucket with priming sugar to carbonate the drink. The dormant yeast and hop residue should be left in the fermenter. The beer should be bottled at this point, and the small amount of yeast in each bottle will start a fermentation process that includes the priming sugar.

The beer will need to be siphoned after a few days. It will need to be put back into the fermenter, which you should have cleaned. The siphoning will continue to keep the drink sanitised, and you will need a clean bottling container with boiling water which will, as we know, kill any bacteria. Get all the materials that you will need in an easily accessible place that will not be in your way. There are brewing kits available that will have all the ingredients and equipment that is needed. Everything that will come into contact with the brew should be thoroughly cleaned and sanitized before use. You should make sure to sanitize everything, including your own hands, so that the brew will not become contaminated.

Fill a large pot with 2 1/2 gallons of water. Use a muslin bag to hold your grains and make sure that it is tied. Put this bag into the pot and allow the water to almost come to a boil. Take the bag out of the pot and remove the pot from the heat.

Add all liquid or dry malt extract to the pot as well as any sugars that you want to add while stirring. Do not add priming sugar or fruit extract at this point as they will prevent carbonation. Dissolve all ingredients before continuing.

Turn the heat back on and bring to a boil. Let the mixture boil vigorously but do not allow it to boil over. Prepare another bag with bittering hops and add it to the pot. Do not use a lid and allow this to boil for sixty minutes. When there are five minutes remaining, add another mesh bag filled with finishing hops to the mixture. After the sixty minutes is up, discard the two bags and remove the pot from the heat.

Prepare an ice bath in the kitchen sink and put the pot into it. This should be done only if you do not own a wort cooler. Stir the mixture gently to make it cool faster. It will be finished when the pot is warm but not hot. This should take around 15 or 20 minutes.

Add two and a half gallons of ice water to your fermenter. If you do not have ice water, add the coldest water that you can. If the water is cool enough, the cooling time will be reduced.

Put the mixture from the pot into the fermenter. Add your yeast and stir with a spoon that you sanitized earlier. Do not rehydrate dry brewing yeast if you are using it.

Close up the fermenter by putting the lid and airlock on it. It should then be rocked or rolled for at least five minutes to aerate the contents. You can take a sample with a sanitized cup at this point if you are using a hydrometer.

Pour the sample that you took into the tube with the hydrometer. Record the readings that you get when the hydrometer floats. This should tell you the gravity and potential alcohol content of your brew. The sample can now be placed into a satellite fermenter. Simply take an old beer bottle and fill it with the sample. Put a paper towel in the neck of the bottle and place it next to your fermenter. The result you get from this will be accurate even if the brew in it becomes infected.

Do another test with the hydrometer after five to seven days and should test it daily afterward. You should not consider bottling the brew until the hydrometer gets the same reading twice in a row. It is better to wait until you get the same readings for two days than it is to rush it and end up wasting all of the beer that you made.

There are three alternatives for bottling. Some people prefer to simply but the beer directly into bottles. Others like it better if it is allowed to settle for a couple of days before bottling. Some people also believe that if you allow the brew to go into a separate fermenter for five more days, it will come out tasting cleaner than either of the other two options. You should probably try all the options available and pick the one that you like best.
